CHOLLA FLOWER ON THE MENU FOR HI-DESERT TEST KITCHEN TONIGHT

At the regular monthly themed dinner gathering, organized by artist Sarah Witt under the name Hi-Desert Test Kitchen, participants explore a different native ingredient each month, and this month’s selection promises to stick to your ribs. Witt says cholla may be the most uninviting ingredient of them all. But don’t let the sharp needles deter you—it’s the flower bud that she is interested in. The buds, which grow on the end of cholla arms, are harvested before they flower. They’ve been an important piece of traditional diets throughout the Southwest.
