At the regular monthly themed dinner gathering organized by artist Sarah Witt under the name Hi-Desert Test Kitchen, participants explore different native ingredients. This month’s pairing of prickly pear and nopales is a guaranteed crowd pleaser. And while these cactus pads and fruit are plentiful here, Witt recommends picking them up at Stater Bros. or Casa Market to assure the best tasting variety and so as not to disrupt the fragile ecosystem we share with area wildlife.
